Our history

Our company was born in 1971 in a little butcher shop placed just in the centre of the old town of Modugno, in the so called "chiazzodde". Under the guidance of the first holder Maglietti Maria, the butcher's stands out for the high quality of its lamb meat, which comes from the mountains of Abruzzo and has always been taken care by the son Gattulli Vito, specifically for the house special 'gnjmridd' (roll). That's how a small family business started to sink it's roots to give life to an extraordinary commercial growth that will end up in giving birth to "Industria Lavorazione Carni srl".

Our business today

Today the company known as "I.L. CARNI srl" with its own sole Holder Vito Gattulli, covers an area of about 1800 squared meters in the Zona Artigianale of Modugno and takes its pride in having 2 great blast chillers able to grant the process of micro-crystalisation at a temperature of -18° C reached in less than 240 minutes in order to mantain unaltered the organoleptic properties of the meat, ensuring consistency and taste. Because of the quality of its products and its house special, passed down from generation to generation, the company is now known all over Italy and thanks to its search for delicacy and tenderness of its products, key point of the company, it now has a strong relationship with its clients and furnishers.

Today the company produces and furnishes its specialties all over the national borders and is always trying to improve itself and be more sustainable to allow a healthy and equilibrate development while also giving new job opportunities.

Small pieces of heart, liver and lungs (exclusively from local lamb) each rapped with parsley in a tender gut

Ovine tripe “Braciolas”

Traditional apulian “braciolas” made with perfectly worked ovine tripe containing parsly, garlic, cheese and pepper

Ovine “Marri”

An exclusive food from Bari made with little pieces of heart, liver and lungs (exclusively from local lamb), minced garlic and parsly, cheese and pepper (possibility to add extra ingredients). The whole thing is lovely wrapped in a layer of ovine fat and in a tender gut. Dimensions may vary depending on the customer’s demand
